The baking story of Carlisle

In 1831 a young Quaker baker named Jonathan Dodgson Carr arrived in Carlisle from Kendal and set up a bakery that grew into one of the earliest mechanised biscuit works in Britain. His thin, crisp water biscuits travelled the world, and biscuits are still made in the city today. Carlisle is a Border city with a red-sandstone castle and cathedral, and the surrounding Cumbrian countryside has sweet traditions of its own. Cumberland rum nicky โ€” a tart of dates, ginger and rum butter โ€” recalls the days when west Cumbrian ports such as Whitehaven traded with the Caribbean, while rum butter itself is a Cumbrian Christmas fixture. The Victorian Market Hall keeps fresh local food at the heart of the city.
