The baking story of Nottingham

The world's favourite cooking apple was born in Nottinghamshire. In the early 19th century a young woman named Mary Ann Brailsford planted pips in her garden in Southwell, and the tree that grew was later named after Matthew Bramley, who owned the cottage when its apples became famous. Nottingham itself is known for Goose Fair, held each October for more than 700 years, where mushy peas with mint sauce are a fairground ritual. Nottingham pudding — whole apples baked inside a light batter — is an old county recipe, and Stilton is made in the north of Nottinghamshire as well as in Leicestershire. Victoria Market and Sneinton Market keep independent food trading alive in the city.

Local bakes to look out for

  • Bramley apple pie – A deep pie of sharp Bramley apples that cook down to a fluffy purée.
  • Nottingham pudding – Cored apples filled with sugar and spice, baked in a light batter.

Bakery hunter's tip: Visit in early October for Goose Fair, or explore Sneinton Market's artisan stalls and Hockley's independent cafés any time of year.

Did you know? Every Bramley apple tree in the world is descended from a single tree grown from a pip in Southwell, Nottinghamshire, in the early 1800s.
