Bread or cake? A quick explanation
Despite its name, banana bread is a quick bread – a loaf-shaped cake raised with bicarbonate of soda or baking powder rather than yeast. It became popular in the 1930s as chemical raising agents became widespread, and its reputation soared again in 2020 when home bakers turned to it during lockdown.
Café versions vary enormously. Some are light and sponge-like; others are dense, sticky and almost pudding-like. Neither is wrong, so it pays to try a few around you.
Variations you are likely to meet
- Classic – banana, brown sugar, butter or oil, and a hint of cinnamon
- Walnut or pecan – nuts folded in and scattered on top
- Chocolate chip – dark chocolate chunks through the loaf
- Tahini or peanut butter swirls – nutty and less sweet
- Vegan – made with oil and plant milk instead of butter and eggs
- Gluten-free – often made with ground almonds, oats or a GF flour blend
- Toasted with butter, honey or mascarpone – a brunch favourite in many cafés
