Decoding German bread names
German loaves are usually named by grain ratio. Weizenbrot is mostly wheat; Weizenmischbrot has more wheat than rye; Roggenmischbrot has more rye than wheat; Roggenbrot is at least 90% rye. Vollkornbrot is wholegrain, often dense and full of whole kernels, while Pumpernickel is baked very slowly at low temperature for many hours until it turns almost black and sweet.
The darker and heavier the bread, the thinner you slice it and the longer it keeps.
