The baking story of Liverpool

Liverpool's most famous dish is scouse, a slow-cooked stew whose name, from the sailors' 'lobscouse', became a nickname for the people themselves. Its bakeries have their own dockside classic: wet nelly, a dense, syrupy bread pudding made from stale bread and fruit, sold by the slab. The city's sweet history goes further back. Toffee was being sold in the village of Everton in the 18th century, and the port's sugar refineries made Liverpool one of Britain's great sugar cities.
