The baking story of Cambridge

Cambridge has a long love affair with the Chelsea bun: square, sticky, glossy with syrup and coiled around currants, it is the bake generations of students have queued for. The university has left its mark on the city's food in other ways too. Cambridge burnt cream, a rich baked custard beneath a shattered sugar crust, has long been associated with Trinity College, whose kitchens are said to have branded the top with the college crest. The open-air market on Market Hill has traded at the heart of the city for centuries and still sells bread, cakes and produce every day.
