The baking story of Ely

Rising out of the flat black fields of the Fens, Ely Cathedral is known as the Ship of the Fens, and the city's very name is linked to the eels that once teemed in the surrounding marshes — they were even used to pay rents. Ely still celebrates that heritage with an annual eel festival. Before the Fens were drained in the 17th century, this was an island community living on fish, wildfowl and reeds; afterwards the dark peat soils became some of the most fertile farmland in England, producing celery, potatoes, wheat and sugar beet. Oliver Cromwell lived here for about a decade, and his house is open to visitors. Cambridgeshire baking is homely rather than grand: fruit cakes, Chelsea buns and savoury fidget pie from old Huntingdonshire.
