The baking story of Coventry

Coventry's own pastry is the godcake: a triangle of puff pastry filled with mincemeat, its top slashed three times. Godparents traditionally gave them to their godchildren at New Year, and the three cuts are usually said to represent the Holy Trinity. The custom was once so established that godcakes were made in different sizes, depending on how generous — or how wealthy — the godparent felt. Coventry was a medieval cloth and wool city, devastated by bombing in 1940 and rebuilt around its new cathedral. One post-war landmark is the circular retail market, opened in the 1950s with a car park on its roof, which still sells bread, cakes and produce. The city's Irish, Punjabi and Caribbean communities add soda bread, mithai and patties to the mix.
