The baking story of Durham

Durham's cathedral and castle crown a rocky peninsula in a loop of the River Wear, but the food of the city is pure North East. Stotty cake — a flat, chewy, dense round loaf — is split and stuffed with ham and pease pudding, the soft yellow purée of split peas that has fed generations of working families. Singin' hinnies, griddled scones rich with lard and currants, take their name from the sizzle they make on the hot girdle. County Durham was coalfield country, and its pit villages, allotments and miners' galas shaped a frugal, filling food culture. The Indoor Market, in the Victorian hall off the Market Place, has served the city since the mid-19th century.
