The baking story of Lancaster

Lancaster's market has royal roots: the town received a charter in 1193, and the Charter Market still fills the streets twice a week. Above the city stands the castle, and below it the River Lune winds out towards Morecambe Bay, famous for tiny brown shrimps potted in spiced butter. The Lancashire countryside produces Lancashire cheese, creamy and crumbly, which crumbles beautifully beside a slice of fruit cake or into a cheese-and-onion pie. Look out for Goosnargh cakes, caraway-scented shortbread biscuits from a village near Preston, and for the shortcrust Chorley cakes and flaky Eccles cakes of the county's south. Lancaster's Georgian streets and university give it a lively café culture.

Local bakes to look out for

  • Goosnargh cake – A thick shortbread biscuit flavoured with caraway seeds and dusted with sugar.
  • Chorley cake – A flat shortcrust round filled with currants, often eaten with butter or cheese.
  • Cheese and onion pie – A Lancashire favourite of melting local cheese and onion in shortcrust.

Bakery hunter's tip: Visit on a Wednesday or Saturday for the Charter Market in the city centre, then walk up to the castle and priory.

Did you know? Morecambe Bay potted shrimps have Protected Geographical Indication status.
