The baking story of Lichfield

Lichfield, with its three-spired cathedral, was the birthplace in 1709 of Samuel Johnson, whose dictionary teased the Scots for eating oats. Johnson's own county was hardly immune to their charms: Staffordshire oatcakes, large soft pancakes of fermented oatmeal batter, remain a Midlands breakfast favourite, rolled around cheese, bacon or sausage. The Market Square, watched over by statues of Johnson and his biographer James Boswell, still hosts regular markets, and the small, walkable centre is full of tea rooms and cafés. Staffordshire's dairy farms are close at hand, and the brewing town of Burton upon Trent lies a short drive away. Pikelets, the Midlands' thin, free-form crumpets, are another local teatime treat.
