The baking story of Middlesbrough

Middlesbrough grew from a handful of farmhouses into an iron and steel giant in the 19th century — Gladstone called it an 'infant Hercules' — and its food has the same big-hearted character. The town's most famous dish is the parmo, a breaded chicken or pork escalope smothered in béchamel and melted cheese, first served by a local chef in the 1950s and now beloved across Teesside. Its bakeries share much with the rest of the North East: stotties for sandwiches, pease pudding, corned beef pies and saveloy dips. Teesside also has strong Italian and South Asian food traditions. The North York Moors, just to the south, offer farm shops, tea rooms and moorland honey.

Local bakes to look out for

  • Stotty cake – A flat, dense, chewy loaf, perfect for big sandwiches.
  • Corned beef pie – Corned beef, potato and onion in pastry, a North East bakery staple.
  • Parmo – A breaded escalope topped with béchamel and cheese, Teesside's signature dish.

Bakery hunter's tip: Try a parmo from a local takeaway, and look for stotties and corned beef pies in traditional bakeries around Linthorpe Road.

Did you know? The parmo is usually credited to Nicos Harris, a chef who served it at a Middlesbrough restaurant in 1958.
