The baking story of Oxford
Oxford's Covered Market opened in 1774 to move the city's messy street stalls under one roof, and it still houses butchers, bakers and cafés beneath its old timbers. The city's breakfast tables gave the world Oxford marmalade: a dark, thick-cut orange preserve first sold commercially here in the 1870s, made to a grocer's wife's family recipe. Oxford even had its own skinless sausage of pork, veal and herbs, recorded in 18th-century cookery books. The county's other great bake comes from the north: the Banbury cake, an oval of flaky pastry filled with spiced currants, whose recipe was printed in the early 17th century.
