The baking story of Portsmouth

Portsmouth has been the home of the Royal Navy for centuries, and the business of feeding sailors shaped the harbour. Across the water in Gosport, the Royal Clarence Victualling Yard baked ship's biscuit by the ton — hard, dry and built to last months at sea — while breweries and slaughterhouses supplied beer and salt beef. In the Historic Dockyard, HMS Victory and the Mary Rose recall the rations of earlier fleets. Portsmouth is England's only island city, built largely on Portsea Island, and its food today is that of a busy port and university town. Southsea's independent cafés and bakeries line Albert Road and Castle Road, and Hampshire's own lardy cake, sticky and rich, still turns up on traditional bakery counters.

Local bakes to look out for

  • Ship's biscuit – A hard, dry, long-keeping biscuit that was a staple of naval rations.
  • Hampshire lardy cake – A dense, sticky bread dough layered with lard, sugar and dried fruit.

Bakery hunter's tip: Southsea's Albert Road, Marmion Road and Castle Road are full of independent cafés and bakeries — combine them with a walk along the seafront.

Did you know? In the age of sail, a Royal Navy sailor's daily ration typically included a pound of ship's biscuit.
