The baking story of Preston

Preston is the only place in Britain that still celebrates a Guild every 20 years, a tradition rooted in a charter of 1179, when the whole city turns out for processions and feasting. Its food has the same proud Lancashire character. Butter pie — potato and onion baked in shortcrust with plenty of butter — was traditionally eaten by the area's Catholic families on Fridays, when meat was off the menu. In the villages just north of the city, Goosnargh gives its name both to caraway-scented shortbread biscuits and to prized corn-fed poultry. Traditional Lancashire cheese, creamy and crumbly, is made on farms nearby. Preston's Victorian market canopy still shelters the outdoor market in the city centre.
