The baking story of Selkirk

Selkirk's bannock is no ordinary bannock. Rather than a flat oatcake, it is a rich, round, yeasted loaf packed with sultanas and baked with plenty of butter, first made by a local baker in the 19th century. It became famous when Queen Victoria is said to have chosen a slice of it over other offerings while visiting Abbotsford, Sir Walter Scott's former home nearby. Scott himself served as sheriff of Selkirkshire, and his statue stands in the town's market place. Each June the Selkirk Common Riding, one of the oldest of the Borders' riding festivals, sees hundreds of horses ride the town's marches. The Borders also offer Border tart, a pastry case of dried fruit topped with icing.
