The baking story of Stirling

Stirling's castle commands the old crossing point of the River Forth, and for centuries whoever held it held the key to Scotland. Mary, Queen of Scots, was crowned in the castle's Chapel Royal in 1543, and she is popularly linked with petticoat tails, the wedge-shaped shortbread cut from a large round whose shape is said to recall the hoops of a court petticoat. Whether or not the story holds, shortbread is sold all over the city. Stirling became a city in 2002 and is surrounded by farmland running up towards the Trossachs; its bakers sell Scotch pies, sausage rolls, empire biscuits and tablet. The Old Town's cobbled streets below the castle hide cafés serving scones and soup to walkers.
