The baking story of Wakefield

Wakefield sits at one corner of the famous Rhubarb Triangle, a small patch of West Yorkshire between Wakefield, Morley and Rothwell where forced rhubarb has been grown since the 19th century. The plants are moved into dark, heated sheds in winter, where they push up tender pink stalks that are harvested by candlelight. Each February the city celebrates with a festival of food, drink and rhubarb. Naturally, rhubarb fills local bakes: crumbles, tarts, rhubarb-and-custard cakes and pies. Wakefield's long history as a market and cloth town shows in its cathedral and Georgian streets, and Yorkshire staples such as curd tart and parkin are always close at hand. Pontefract, home of liquorice, lies just to the east.
