The baking story of Wells

Wells is England's smallest city, a cluster of medieval streets around one of the most beautiful cathedrals in the country. Its market has filled the Market Place twice a week for centuries. Beside the cathedral, the moated Bishop's Palace keeps one of the city's most charming food traditions: its mute swans ring a bell on the gatehouse wall when they want feeding, a trick passed down since the 19th century. Wells sits at the foot of the Mendip Hills, a few miles from Cheddar Gorge, where cheese was once matured in the caves. Somerset bakers favour apple cake, cider cake and cheese scones, made with apples and cheese from the surrounding farms and orchards.

Local bakes to look out for

  • Somerset apple cake – A dense, moist cake packed with chunks of local apple.
  • Cheddar cheese scone – A savoury scone made with sharp, mature Somerset Cheddar.
  • Somerset cider cake – A fruit cake made with dried fruit soaked in local cider.

Bakery hunter's tip: Come on a Wednesday or Saturday for the market, then visit the Bishop's Palace moat to look for the bell-ringing swans.

Did you know? Cheddar cheese takes its name from the nearby Somerset village of Cheddar, where cheese was traditionally matured in the gorge's caves.
