County Armagh is known as the Orchard County, and its Bramley apples are so tied to the place that they carry protected status. Sharp, juicy and quick to collapse into a fluffy purée, they make the classic Armagh apple tart, baked on a plate with shortcrust above and below. The city itself, Ireland's ecclesiastical capital, with two cathedrals both dedicated to St Patrick, sits in the middle of this fruit-growing country.
