The baking story of Lisburn

Lisburn earned city status in 2002, but its fortunes were built centuries earlier on linen. Huguenot weavers, led by Louis Crommelin, helped establish the industry here around 1700, and the local museum and Irish Linen Centre tell that story today. The Lagan valley's mills and bleach greens needed workers, and those workers lived on griddle breads: soda farls, potato bread and oaten bread cooked over the fire. Such traditions are still at the heart of Lisburn's bakeries, alongside wheaten loaves, iced Paris buns and the endless variety of Northern Irish traybakes — caramel squares, rocky road and lemon slices. Market Square, the historic centre, has long hosted a weekly market.
