The baking story of Falmouth

Falmouth, on one of the world's deepest natural harbours, was once the base of the Packet Service that carried mail across the British Empire, and its maritime history fills the town. Its waters are home to a remarkable fishery: native oysters in the Fal estuary are still dredged by traditional sailing and rowing boats, as rules protecting the oyster beds forbid engine power while dredging. Each October the town celebrates with an oyster festival. Falmouth's bakers keep Cornwall's traditions alive with pasties, saffron buns, splits with clotted cream and heavy cake, and the town's university and art school give it a lively café scene along its long, winding main street.

Local bakes to look out for

  • Cornish pasty – Beef, potato, swede and onion in a side-crimped pastry.
  • Saffron bun – A golden, fruited bun scented with saffron.
  • Cornish split – A soft white bun split and filled with clotted cream and jam.

Bakery hunter's tip: Walk the long main street from the Moor to Arwenack Street for bakeries and cafés, and visit in October for the oyster festival.

Did you know? Oysters in the Fal estuary are dredged from sailing and hand-pulled boats, one of the last fisheries in Europe to work this way.
