The baking story of Salisbury

Salisbury was built as a planned city in the 13th century, laid out in a grid of 'chequers' around a great market place, and its Charter Market has filled that square ever since. The cathedral, with the tallest spire in England, watches over it all. This is Wiltshire, and Wiltshire's signature bake is lardy cake: a rich bread dough rolled and folded with lard, sugar and dried fruit, then baked until the base is sticky with caramel. It was once a treat for harvest and feast days, and it remains a favourite in traditional bakeries. The county is also famous for its bacon and ham cures, and the chalk downland of Salisbury Plain has grown wheat and barley for thousands of years.
