Arbroath is the home of the Arbroath smokie: a whole haddock, salted, tied in pairs and hot-smoked over hardwood in a barrel until the flesh is golden and flaky. The method came from the nearby fishing village of Auchmithie, whose families brought it with them when they moved to Arbroath's harbour in the 19th century. Arbroath is also where Scotland's nobles wrote the Declaration of Arbroath in 1320, at the town's great abbey. Its bakers serve the Angus specialities — Forfar bridies from just inland, butteries and Scotch pies — and smokies turn up in pies, pâtés and Cullen skink across the town. Eaten warm from the barrel, a smokie needs nothing more than a buttered roll.
