The baking story of Dundee
Dundee was famously built on 'jute, jam and journalism', and the jam part of the story is really marmalade. In the late 18th century Janet Keiller and her son James began selling a chunky orange preserve in the city, and Dundee marmalade went on to become a global export. The same family business helped make Dundee cake famous: a rich, light fruit cake crowned with concentric rings of whole blanched almonds and scented with orange peel. Dundonians are just as devoted to their pies, or 'pehs' in local dialect — Scotch pies of minced mutton or beef in a hot-water crust. The waterfront has been transformed in recent years, but bakery culture remains fiercely, proudly local.
